Every day has been cheat day for me. I take multiple trips to the fridge because why not. I order food in because why not. There have been many obstacles to maintaining my diet. It’s been hard to keep in shape because I am used to the physical education I received when school was still in session.
This has been my quarantine for the past 88 days.
I miss the restaurants. Every Friday I would go out to eat with my family. My family is Vietnamese so we really love to go to Vietnamese restaurants but recently, we haven’t been anywhere due to this quarantine. I haven’t had sushi, steak, or genuine Vietnamese cuisine in a while. Every day it is always cereal, or eggs for breakfast, a sandwich or rice for lunch, more rice with any sort of protein for dinner, and soda and junk food mixed in-between. It’s repetitive, but I’m glad I have something to eat.
With more time at home, I often find myself opening the fridge every hour hoping for it to restock with more food. But it never does restock. The same boring foods sit in there. My tastebuds are longing for variety, but the variety doesn’t exist in my household, or during this quarantine.
The grocery stores are empty and they look just how they would during a zombie apocalypse. My favorite fruits and snacks have already been raided from the shelves. Toilet paper and many common household items have become a precious commodity.
This year has been different. Thanks, COVID 19.

Hmm…. I have plenty of eggs, milk, cheeses, and sliced sandwich meats in the fridge. Sometimes we have tomatoes, onions, and lettuce as well as peanut butter, mayonnaise, and ketchup. In the pantry, I have bread, cereal, chips, fruit snacks, and packaged noodles that have to be boiled or you can eat them crunchy like chips.

You ready? You are going to cook up some lunch meat. Set it to the side with a slice of cheese on top. Then you are going to make a mix-in. Mix either honey and hot sauce or syrup and hot sauce. . Take out two slices of bread. Then you are going to mix eggs and milk in a cup: 2 eggs plus 1/2 cup milk. Then pour that in a pie pan or shallow container. Heat up a pan, non-stick if you have it and add some butter on medium heat. Dip the bread in the egg/milk mixture, both sides and put it in the pan and cook until it looks done on both sides. Take out the “French Toast” put one slice on a plate, top with cooked meat and cheese, cheese side down, then drizzle with your spicy honey or syrup, then top with your other slice of french toast and BOOM. You got something they would charge $14 for at Burnt Crumbs in HB. Enjoy.
