Every since quarantine has started, I actually have a better relationship with food than I did before. Before this, I didn´t have unhealthy diet or eating habits but I always felt like I was mindlessly eating junk instead of actually consuming the foods I enjoy and want to eat. I´ve decided that since we´re going to be inside for quite a while, might as well get my eating habits on the right track. It definitely was not effortless and simple as I thought it would be; I had cravings for unhealthy food that I used to eat very often such as chips, cookies, ice cream, whip cream, chocolate, and candies. My goal/solution was to NOT diet completely and be a total health junkie, but try to eat the healthiest and freshest produces and food available and whip up the ¨healthiest¨ but most delicious dishes from it.
I also tried (and failed, most of the time) to make different dishes using recipes I found online. My biggest fail would be a sticky garlic noodle with soy sauce; everything was sloppy, the sauce was too salty, the noodle was too soggy, and I didn´t know how to mince garlic properly so there were big chunks of it floating around. My favorite successful recipe would be a vegan curry with coconut milk. It´s even better than regular curry because the coconut milk makes it so much creamier and richer. You can also add whatever veggies you want to. For me, I added carrots, sweet potatoes, broccoli, shiitake mushrooms, and zucchini. It was amazing. It would have better with some naan bread but we didn´t have flour so I ate it with white rice. I´m not Gordon Ramsay but it was a 10/10.

Not only do I eat healthier and better now, I also started to work out everyday. Not going to lie, when I first started, I wanted to just stop after the first rep and take a nap because it was so physically difficult for a rather out of shape person like me. Don´t worry, I didn´t give up!! Yay me!! I pushed through and I actually excercise on a daily basis now. It´s a bit unexpected to me because I´m such a lazy person who rather be watching Buzzfeed Unsolved on Youtube and munch on some green grapes but working out everyday has definitely been very rewarding. Not only do I look physically healthier and more toned, I feel happy and less stressed (even I´m always sore after). I really recommend just getting up and move through the day, you know, you don´t have to run 5 miles or anything, just do some chores and if it´s possible, take a nice walk (wearing a mask and staying 6 ft away, of course 🙂 ).

Beside eating healthy and drinking a lot of water, I also developed an everyday ¨ritual¨ now. Every morning, after my big cup of lemon water, I make myself a big ol´ cup of matcha latte. The milk factor varies because I like all sorts of milk (no cow milk though because I´m lactose intolerant), anything from oat, almond to soy and peanut milk. Basically you put a tablespoon of matcha powder into a cup, put a lil bit of hot water, and whisk it up using a bamboo whisk. Afterwards you add the milk of your choice. These days, I´m into oat milk, especially the Oat-ly low fat oat milk, the creamiest yet lightest vegan milk you´ll ever taste. Downside? to me, it´s a bit expensive ($5.99 per carton???). You can have it as is but I prefer to add some ice to it and boom, who needs a cafe when you can make your own matcha latte!!!

Love this. I totally struggle with any type of rice noodle. Total hit and miss. Way easier to cook with Italian pasta, but maybe I just need more practice. Curry is SUPER tasty and while it seems complicated it’s kinda foolproof and it goes with just about any veggie. Are you still looking for flour?
